Polska Siberian

This variety comes from Siberian Sturgeon. While it does not have as large or firm an egg as those of its cousins Osetra or Kaluga, it's valued for its exceptionally creamy flavor profile, with a subtle hint of the sea. The pearl colors shimmer between chocolate brown to light gray hue. 

The sturgeon live in breeding ponds supplied with crystal clear water from the Polish Lyna River,  within the nature preserve in the Napiwodzko-Ramucka Forest of Warmia, known as the “green lungs of Poland.
